Once I had my Rosh Hashanah menu planned I set out to create a special drink as well. I wanted it to highlight some of the important items that play a role during the high holy day; apples, honey, and pomegranate. Not only will this “sipper” look beautiful on your table, it is also a great drink to serve {sans the mead} the kids!

* To make the pomegranate syrup: In a small sauce pan, combine 1.5 cups of 100% pomegranate juice {fresh or store-bought} and 2 TB organic honey. Bring to a bubble over medium heat. Reduce heat to medium-low and allow it to reduce. * Mine reduced for 40 minutes, stirring occasionally, resulting in a sauce that was slightly thicker than juice, thinner than syrup.

This drink gives a nod to three very important ingredients consumed during Rosh Hashanah. Leave out the alcohol for a special kid-friendly festive drink, too!
Ingredients
- 1 part organic apple cider
- 1 part mead {a wine made of honey}
- splash of pomegranate syrup*
- 3 pomegranate arils
Directions
- Pour cider and mead in a champagne flute. Add a splash of pomegranate syrup and 3 pomegranate arils. *cheers*
